Easy Weeknight Meal: One Dish Grilled Sausage and Veggies

We are all way too busy anymore. Days need more hours. To-do lists keep growing and sometimes I feel like I am on a game show called, See How Much You Can Get Done Today. Ladies and Gentleman, come on down!

So, for me, quick, easy dinners are a must. Especially ones that pack a flavor punch. If you can add healthy into the mix, well, then, you got yourself a winner!

And, today that is just what I present you, a winner of an easy weeknight meal. Heck, make it on weekends too? What, do I care!

One Dish Grilled Sausage and Veggies
Serves 4

  • Sweet Italian Sausage
  • 1 Zucchini
  • 1 Yellow Squash
  • 1 Sweet Onion
  • 1 Tomato
  • Handful of Fresh Basil
  • 1 Tbls of Balsamic Vinaigrette
  • Italian Seasoning, to taste
  • Garlic Powder, to taste
  • Salt & Pepper, to taste

To begin, I almost always blanch sausage before grilling. I think it allows for a even cook. To blanch the sausage, fill a pot or skillet with enough water to completely cover your sausages. Bring the sausages to a boil and cook until they turn grey, approximately 10 to 15 minutes. Remove the sausages from the water and transfer to the grill or pan to finish cooking.

While the sausages are blanching, I heat the grill and begin prepping the veggies. I cut the zucchini and yellow squash in half, short ways, then cut the half in half. I cut the onion into 1/2″ steaks, keeping the core intact for grilling. Place all cut veggies in a bowl, add olive oil, Italian Seasoning, garlic powder and salt and pepper. Stir to coat the vegetables. Place the vegetables and sausage on grilling, turning vegetables once per side. Once everything is cooked, move to serving dish and coat with diced tomato, fresh basil that has been cut into ribbons and sprinkle with balsamic vinaigrette.
