Easter Bunny Popcorn Dessert

Lo is officially a graduate of Sweet Tooth University. I know, I know – sugar city. Not good. Well, she gets it honestly. In high school I begged guys to break up with me so I could sit on my couch and down a pint of ice cream with no regrets or guilt. Just kidding. I hated heartache. Nathan, well he loves chocolate chip cookie cakes and just about any pie, especially Razzleberry. Then add the fact that Nathan’s family has an ice cream parlor and I am all like – yeah just give me an ice cream sundae with some hot fudge.

I admit. We are sweet tooths in this house.

So, I had an idea. Why not take a semi-healthy snack, such as popcorn, and ruin it! Ha! Totally kidding. Well, sorta of. This is a special treat for a special occasion – the return of Spring and Easter.

Right now, Lo is a bit excited to lend a hand in the kitchen. She will pull a chair over to the stove and counter and help me stir or add ingredients to a bowl. This was a recipe she could get involved with, not to mention, she can be rewarded with some serious sweet tooth snacking.


EASTER BUNNY DESSERT

  • 1 Bag of Popcorn – Popped in microwave
  • 2 tsp of Butter
  • 5-6 Peeps of any color
  • Sprinkles

That is it folks! Pop popcorn in the microwave or make on the stove top, whichever you prefer. Heat 2 tsp of butter on the stove, do not boil! Once the butter has melted, turn the heat to medium and add five to six peeps (use all same color) and stir with a spatula until melted. Be careful not to burn. Stirring helps! Once melted pour over popcorn and mix, using a spatula. If you want to use multiple colors, repeat the butter and peep steps. I used green and purple peeps. Add sprinkles, mix and serve!

Other options: Add in pretzels, pastel m&ms, peanuts or jelly beans!
Popcorn Brands: Skinny Pop, Skinnygirl Popcorn or Newman’s Own.

It is that easy and so addicting, especially when warm.
